Oaxaca lies within the Mezcal DO, and its mezcal area is concentrated in the Central Valleys (Tlacolula, Zimatlán, Ejutla, Ocotlán) and the Sierra Sur (Yautepec, Miahuatlán, Sola de Vega). Espadín (Agave angustifolia) is the most used agave, alongside others such as tobalá and wild arroqueño. The standard defines mezcal, artesanal and ancestral; the last is cooked only in pit ovens and distilled in clay pots.
