Chihuahua

In Chihuahua, vines grow on semi-arid high plains such as Encinillas, about 80 km north of the state capital, where wide swings between day and night temperatures suit reds from Cabernet Sauvignon and Merlot. The state also falls within the Sotol DO, with Coahuila and Durango: sotol is distilled from the heart of the Dasylirion, a desert plant of the Central Plateau, at 1,000 to 2,000 m.
