In the glass

Deep garnet with purple glints; floral aroma with black fruit and spice. Light, fresh attack, soft tannins and notes of fruit and oak.

At the table

With grilled cuts, characterful cheeses and Provençal cooking.

Aging

Late harvest in October, early in the morning before the autumn rains; fermented in vats at low temperatures with gentle daily pump-overs and rack-and-returns. After a standard maceration it is drawn off in November and aged in French oak barrels for more than a year, then kept in vats for a few weeks to integrate the wood, showing fresh tannins with a mineral structure and assured aging potential

Provence

France

Provence's vineyards stretch some 200 km between the Mediterranean and the Alps. Its three main AOCs are Côtes de Provence, Coteaux d'Aix-en-Provence and Coteaux Varois en Provence. The Mediterranean climate is dry and sunny, with about 2,800 hours of sunshine a year and the dry mistral wind. About 91% of the vineyard is devoted to rosé, based on Grenache, Cinsault and Syrah; the rest goes to Rolle whites and to reds.
