In the glass

Garnet with ruby highlights. Ripe red and black fruit, cocoa, coffee, nuts and tobacco, with spice, wood and leather; full-bodied and layered, with a velvety texture. Best given time to breathe.

At the table

With charcoal-grilled beef cuts, roast lamb, game, tuna or salmon, and aged cheeses; also with lamb barbacoa (slow-cooked lamb), carnitas or a rich mole.

Aging

12–18 months in French, Hungarian and American oak; half first-fill, half second-fill

How it's made

Hand-harvested; each variety ferments separately in 2,000 L steel tanks at 26–30 °C, with 18 to 30 days on the skins, and basket pressing

Baja California's vineyards are concentrated within about 90 km of Ensenada, on the Pacific coast, in valleys such as Guadalupe, San Antonio de las Minas, Santo Tomás, San Vicente and Ojos Negros. The climate is Mediterranean and dry, with hot summers tempered by Pacific winds and cool nights. Many grapes are grown, among them Cabernet Sauvignon, Merlot, Nebbiolo, Tempranillo, Grenache, Petite Sirah and Chenin Blanc.
